With spring here and summer right around the corner this potato salad will be a hit at any backyard cookout this year. You can double or even triple the recipe depending on how big your party is. And of course you can use my Easy Homemade Mayonnaise in this recipe if you so desire.
Variations On Potato Salad
- Add diced bacon, shredded cheese, and chopped chives for a loaded potato salad.
- If you like spicy, you could add pepper jack cheese and top with hot paprika.
- Make it a garden style potato salad by adding more fresh chopped veggies such as carrots, bell peppers, and sliced radishes.
Picnic Potato Salad
Ingredients
- 3 lbs Small yellow potatoes
- 4 Large eggs hard boiled
- 1 1/4 C Mayonnaise
- 1 stalk Celery diced small
- 1/2 Small onion diced small
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1/4 tsp Paprika
Instructions
- Add your potatoes to a stock pot and cover with cold water.
- Bring to a boil and cook until fork tender.
- While potatoes are cooking, roughly chop the hard boiled eggs and dice the onion and celery.
- When the potatoes are cooked, remove from heat, drain and rinse with cool water. Let sit until cool enough to handle.
- In a large mixing bowl combine the potatoes, onion, celery, mayo, salt and pepper. Add the eggs and gently mix to combine without mashing the eggs.
- Sprinkle the paprika over the top. Serve while still warm or chill until ready to eat.
