If you have never tried making your own mayonnaise you are truly missing out. It is so easy to do with a few simple ingredients that you most likely already have in your kitchen.
The first time I made homemade mayo was in culinary school. We did it the old fashioned way with a whisk and a little bit of elbow grease. It took a lot longer than I had hoped for. Not to mention that my arm was quite tired by the time it was ready.
The flavor however, was unbeatable. I wanted to say I would never buy jarred mayo again, but with the effort it took to make by hand, I knew that was a lie. Behold, the immersion blender. Homemade mayo for life!
Kitchen tools needed
In order to make mayo from scratch you will need a few kitchen tools. You will need a large mouth mason jar, a tight fitting lid for storing, and a good quality high speed immersion blender. I use the one from NutriMill and it is wonderful.
It comes with a stand to store it on and an assortment of different blade attachments depending on what you are using it for. There is even an attachment specifically for making mayonnaise. I highly recommend investing in one of these for your kitchen.
Ingredients For Mayonnaise
To make the mayo you will need the following ingredients-
- 1 egg
- 2 teaspoons white vinegar
- 1/2 teaspoon salt
- 1 cup light oil (avocado, canola, vegetable, or light olive)
- 1/2 tablespoon lemon juice
- 1/4 tsp ground mustard
For this recipe I used eggs I purchase from a local farm, light olive oil, and bottled lemon juice. I normally would use juice fresh from a lemon, I just didn’t have any. It works with either.
Making The Mayo
Add the egg into the large mouth jar with the seasonings. Place the immersion blender directly over the egg yolk and pulse it a few times quickly. Slowly drizzle your oil in as you blend on the lowest speed. Within 30 seconds or so you should have finished mayonnaise.
